Ingredients
  

  • 1 lb ground beef or turkey
  • 1 onion chopped
  • 2 cans mixed vegetables drained
  • 1 can diced tomatoes
  • 1 can tomato soup
  • 4 cups beef broth
  • Salt pepper, and garlic powder, to taste

Method
 

  1. In a large pot or Dutch oven, brown the ground beef (or turkey) and chopped onion over medium heat until the meat is fully cooked. Drain any excess fat.
  2. Add the drained mixed vegetables, diced tomatoes, tomato soup, and beef broth to the pot.
  3. Season with salt, pepper, and garlic powder to taste.
  4. Stir well, then bring the mixture to a simmer. Allow to cook for 20-30 minutes, stirring occasionally, until heated through and flavors are well blended.
  5. Serve hot and enjoy!

Notes

  • For extra flavor, add a bay leaf while the soup simmers and remove before serving.
  • Feel free to substitute or add fresh vegetables, such as diced potatoes, green beans, or corn.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage.
