Caramel Apple Jam

Ingredients
  

  • 6 cups finely diced peeled apples (Honey Crisp apples recommended)
  • 1/2 cup water optional: substitute with 1/2 cup spiced rum, cinnamon whiskey, or bourbon
  • 1/2 tsp butter
  • 1 package Sure-Jell powdered fruit pectin
  • 4 cups granulated sugar
  • 1 cup packed brown sugar
  • 1/2 tsp ground cinnamon heaping
  • 1/4 tsp ground nutmeg

Method
 

  1. In a large stockpot, combine diced apples, water, and butter. Cook over low heat, stirring frequently, until apples are tender (about 10 minutes).
  2. Stir in pectin, then bring the mixture to a rolling boil while stirring constantly.
  3. Add granulated sugar, brown sugar, cinnamon, and nutmeg, then return to a rolling boil. Stir constantly for 1 minute.
  4. Remove from heat, skimming any foam. Ladle the hot jam into hot, sterilized jars, leaving 1/4-inch headspace.
  5. Remove any air bubbles, wipe rims, and adjust lids. Process jars in a boiling water bath for 10 minutes.
  6. Twist jars gently from side to side while cooling to evenly distribute apple pieces throughout the jam.

Notes

  • Gently twist jars after cooling to evenly disperse apples in the jam.
  • Replace water with rum, bourbon, or cinnamon whiskey for an adult twist.
