  • 2 packages of fresh strawberries
  • 16 oz cream cheese softened
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/2 cup granulated sugar
  • 1/2 cup pretzels crushed into fine crumbs
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Prepare the strawberries: Wash and dry your strawberries thoroughly. Using a small spoon, carefully scoop out the stem of each strawberry to create small wells. Make sure not to scoop too deeply to maintain the structural integrity of the berries.
  2. Make the cheesecake filling: In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon juice. Mix well until smooth and creamy with no lumps remaining. The lemon juice adds a slight tanginess that balances the sweetness.
  3. Fill the strawberries: Transfer the cheesecake mixture into a piping bag or use a spoon to fill each strawberry with the cream cheese mixture. Fill to slightly above the top of the strawberry for an attractive presentation.
  4. Add the pretzel coating: Place the crushed pretzel crumbs in a shallow dish. Dip the cheesecake-filled end of each strawberry into the pretzel crumbs, ensuring the filling is well-coated. The salty pretzels will provide a delightful contrast to the sweet filling.
  5. Prepare the chocolate drizzle: Place the chocolate chips in a microwave-safe bowl. Heat in 30-second increments, stirring between each interval, until the chocolate is completely melted and smooth. Be careful not to overheat.
