Ingredients
  

  • Sliced melting cheese enough to line the pan
  • 1 bunch spinach cooked and squeezed dry
  • 2 cups ricotta cheese
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese plus extra for topping
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of garlic powder

Method
 

  1. Prepare the Pan
  2. Line a greased 9.5-inch ring or bundt pan with sliced cheese. Ensure there are no gaps and the cheese completely covers the bottom and sides of the pan. This creates a delicious outer layer for your ricotta ring.
  3. Mix the Filling
  4. In a large mixing bowl, combine the cooked and squeezed dry spinach with ricotta cheese, eggs, 1/2 cup of grated Parmesan cheese, salt, pepper, and a tiny bit of garlic powder. Mix thoroughly until all ingredients are well incorporated and the mixture has a smooth, consistent texture.
  5. Fill the Pan
  6. Pour the spinach and ricotta mixture into the cheese-lined pan, spreading it evenly with a spatula. Smooth the top surface and sprinkle with additional Parmesan cheese to create a flavorful crust when cooked.
  7. Cook the Ring
  8. Choose either stovetop or oven method. For stovetop: place the pan in a snug pot, cover, and cook on low-medium heat for 20 minutes. For oven: bake at 350°F (175°C) for 25-30 minutes until the mixture is set and firm to the touch.
  9. Rest and Serve
  10. Allow the cooked ricotta ring to rest for 5 minutes. Carefully flip onto a serving plate and gently lift off the pan. Slice into portions and serve warm. Alternatively, you can chill it and reheat portions later as needed.
