  • 2 lbs. ground chicken
  • 1 egg
  • 1/4 cup plain breadcrumbs
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup mayonnaise
  • 6 slices Virginia chicken ham
  • 6 slices Swiss cheese
  • 3/4 cup panko breadcrumbs for topping
  • 1 cup skim or 1% milk
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/4 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon freshly grated nutmeg
  • Salt and pepper to taste

Method

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix ground chicken with minced onion, garlic powder, dried parsley, egg, mayonnaise, plain breadcrumbs, salt, and pepper.
  3. Grease a loaf pan and press half of the chicken mixture into the bottom.
  4. Layer the ham slices and Swiss cheese over the chicken mixture.
  5. Cover with the remaining chicken mixture and press down.
  6. Bake for 25 minutes.
  7. Remove from the oven, sprinkle with panko breadcrumbs, and bake for an additional 15 minutes.
  8. In a saucepan, melt butter, whisk in flour, and slowly add milk and cream to make a gravy. Add Worcestershire sauce, Dijon mustard, Parmesan, nutmeg, salt, and pepper. Simmer until thickened.
  9. Let the meatloaf rest for 10 minutes before slicing. Serve with the prepared gravy.

Notes

  • For a crunchier topping, add grated Parmesan to the panko breadcrumbs.
  • To make the dish ahead of time, assemble the meatloaf and refrigerate it until ready to bake.
