Ingredients
  

  • 1 20-ounce can crushed pineapple, drained well (reserve about 2 tablespoons of juice)
  • 1 8-ounce tub Cool Whip, thawed
  • 1 3.4-ounce package instant vanilla pudding mix
  • 1 cup mini marshmallows
  • ½ cup shredded sweetened coconut optional
  • ½ cup chopped pecans or walnuts optional
  • 1 cup cottage cheese or 8 ounces cream cheese softened
  • ½ teaspoon vanilla extract
  • A pinch of salt

Method
 

  1. Prepare the Base: Drain the crushed pineapple thoroughly, reserving about 2 tablespoons of juice. If using cream cheese, beat it in a large bowl until smooth and fluffy. For cottage cheese, blend briefly for smoothness.
  2. Mix the Creamy Foundation: Combine the softened cream cheese (or cottage cheese) with the vanilla pudding mix and reserved pineapple juice in a large mixing bowl. Blend until creamy and well incorporated. The pudding mix will begin to thicken, creating the fluffy base.
  3. Add the Pineapple: Gently fold in the crushed pineapple, ensuring it's evenly distributed throughout the creamy mixture. The pineapple should be visible but not overwhelm the texture.
  4. Fold in Cool Whip: Add the Cool Whip to the bowl and gently fold it in using a rubber spatula. Use a light touch to maintain the airy texture. Continue folding until everything is evenly combined into a soft, cloud-like consistency.
  5. Add Texture and Sweetness: Stir in the mini marshmallows, shredded coconut, and chopped pecans (if using). These ingredients add delightful texture variations. The marshmallows will soften as the dessert chills, becoming tender and melt-in-your-mouth.
