Ingredients
  

  • cups cottage cheese blended smooth
  • 1 large head cabbage chopped into 1-inch pieces
  • 2 cups shredded cheddar cheese
  • 1 small onion diced
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup crushed Ritz crackers
  • 3 tablespoons butter melted

Method
 

  1. Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. This ensures even cooking and prevents sticking.
  2. Cook Protein: If using ground beef, cook it in a skillet over medium heat with the diced onion until browned and softened. Drain excess grease to prevent a greasy casserole.
  3. Prepare Cottage Cheese: Blend the cottage cheese until smooth using a blender or food processor. This creates a creamy base without the chunky texture.
  4. Mix Wet Ingredients: In a large bowl, mix blended cottage cheese, chicken broth, garlic powder, onion powder, salt, pepper, and half of the shredded cheddar cheese. This creates a flavorful, creamy sauce.
  5. Combine With Cabbage: Add chopped cabbage and cooked beef (if using) and toss until evenly coated. Make sure all pieces are well covered with the cheese mixture.
  6. Transfer To Baking Dish: Transfer mixture to the prepared baking dish and spread evenly to ensure consistent cooking throughout.
  7. Add Cheese Topping: Sprinkle remaining cheddar cheese on top to create a delicious golden crust.
  8. Add Cracker Topping: Mix crushed Ritz crackers with melted butter and sprinkle evenly over the casserole for a crunchy, buttery finish.
  9. Bake: Bake uncovered for 35–45 minutes, until bubbly and golden brown. The uncovered baking allows the top to become crispy.
  10. Rest Before Serving: Let rest for 10 minutes before serving to allow the casserole to set up and the flavors to meld together.

  • For a low-carb version, you can replace the Ritz crackers with crushed pork rinds or almond flour mixed with parmesan.
  • Adding 1 teaspoon of caraway seeds enhances the cabbage flavor with a traditional touch.
