  • 2/3 cup Minute Rice
  • 2 3/4 cups milk
  • 1/3 cup sugar
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1/2 cup raisins
  • Cinnamon for sprinkling

Method
 

  1. Preheat the oven to 350°F and butter a 1-quart baking dish.
  2. In the prepared dish, combine the Minute Rice, milk, sugar, butter, salt, vanilla, nutmeg, and raisins.
  3. Bake the mixture in the oven for 1 hour, stirring after the first 15 minutes.
  4. Once done, stir the pudding again and sprinkle with cinnamon.
  5. Serve warm or chilled. The pudding will thicken as it cools.

  • You can substitute whole milk with coconut milk or almond milk for a dairy-free version.
