Preheat & Prep
Preheat your oven to 350°F (175°C). Generously grease a 9-inch pie plate or springform pan with butter or nonstick cooking spray. This ensures the brownie pie will release easily once baked.
Melt Butter and Chocolate
In a microwave-safe bowl, combine 6 Tbsp of unsalted butter with 2 cups of chocolate chips. Heat in 30-second intervals, stirring between each until completely smooth. Allow the mixture to cool slightly so it won't cook the eggs when combined.
Whip Eggs & Sugar
In a separate bowl, beat the 3 large eggs, 1 cup of sugar, and 1 tsp of vanilla extract on medium-high speed for approximately 3 minutes. The mixture should become pale and fluffy, which creates the perfect base for your brownie pie.
Combine Mixtures
Reduce the mixer speed to low and gradually pour the warm chocolate mixture into the egg blend. Mix until just combined, being careful not to overmix or scramble the eggs.
Add Dry Ingredients
Gently fold in the ½ cup of all-purpose flour, ¼ tsp of baking powder, and ¼ tsp of salt until just integrated. The minimal mixing preserves the gooey texture of the final product.
Stir in Extra Chocolate
Fold in the remaining 1 cup of chocolate chips, ensuring they're evenly distributed throughout the batter. These will create pockets of melted chocolate in the finished brownie pie.
Bake
Pour the batter into your prepared pie plate. Bake for 35-40 minutes, or until the edges are set but the center still has a slight jiggle when the pan is moved. This ensures the perfect gooey center.
Cool & Serve
Allow the brownie pie to cool completely for the best slicing texture. Serve slightly warmed or at room temperature, drizzled with hot fudge sauce and topped with ice cream or whipped cream for an extra indulgent treat.
