Method
- Step 1: Marinate the Chicken
- Whisk together olive oil, honey, lemon juice, lemon zest, oregano, basil, salt, garlic powder, red pepper flakes, and black pepper in a bowl.
- Pound the chicken breasts to about ½ inch thick to ensure even cooking.
- Place chicken in a shallow bowl or ziplock bag and pour the marinade over it.
- Let marinate for at least 30 minutes, or up to a few hours for deeper flavor.
Step 2: Prepare the Tzatziki Sauce
- In a bowl, mix Greek yogurt, grated cucumber, dill, olive oil, lemon juice, minced garlic, and salt.
- Stir well and let it chill in the fridge while preparing the rest of the dish.
Step 3: Cook the Chicken
Using an Air Fryer:
- Preheat the air fryer to 380°F.
- Cook the chicken for 7 minutes on one side, then flip and cook for another 3-4 minutes.
- Ensure the internal temperature reaches 165°F.
Using a Skillet:
- Heat a skillet over medium-low heat with a bit of oil.
- Cook the chicken for 7-8 minutes per side until golden brown and fully cooked.
Step 4: Assemble the Bowls
- Start with a base of cooked white rice.
- Add shredded romaine lettuce, cherry tomatoes, diced cucumber, and red onion.
- Slice the cooked chicken and arrange it on top.
- Drizzle with tzatziki sauce and sprinkle with feta cheese if desired.
