Preheat Oven & Prepare Baking Dish
Preheat your oven to 375°F (190°C).
Grease a 9×13-inch baking dish with cooking spray or olive oil.
Cook Ground Beef Mixture
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add 1 lb ground beef and cook until browned (5-7 minutes). Drain excess fat if necessary.
Stir in chopped onion and minced garlic. Cook for another 3-4 minutes until the onion is soft and translucent.
Layer the Casserole
Spread the cooked ground beef mixture evenly in the bottom of the greased baking dish.
Layer the thinly sliced potatoes on top of the beef.
Season with salt, pepper, Italian seasoning, and paprika.
Add Cheese & Liquid
Sprinkle 1 1/2 cups shredded cheddar and 1/2 cup grated Parmesan cheese evenly over the potatoes.
Pour 1/2 cup beef broth (or water) around the edges to keep the potatoes moist while baking.
If you prefer a creamier texture, drizzle 1/4 cup milk over the potatoes.
Bake the Casserole
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for another 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
Garnish and Serve
Sprinkle with fresh parsley if desired.
Serve hot and enjoy this comforting meal!
