Ingredients

  • 6 tablespoons all-purpose flour
  • teaspoon salt
  • 1/16 teaspoon baking soda
  • teaspoon baking powder
  • 5 tablespoons water
  • 1 tablespoon olive oil
  • 1 ½ tablespoons prepared pizza sauce
  • 2 ½ tablespoons shredded mozzarella cheese
  • Pinch approximately 1/16 teaspoon dried Italian seasoning
  • 6-8 mini pepperoni slices

Method

  1. Combine Dry Ingredients: In a 12-ounce microwave-safe mug, add the all-purpose flour, salt, baking soda, and baking powder. Stir all these dry ingredients thoroughly to ensure they are well combined and evenly distributed.
  2. Add Wet Ingredients: Pour the water and olive oil into the mug with the dry ingredients. Using a fork or mini whisk, mix until no dry pockets of flour remain and you have a smooth batter. Spread the dough batter into an even layer at the bottom of the mug.
  3. Add Toppings: Spread the pizza sauce evenly over the dough, making sure to cover it completely. Sprinkle the shredded mozzarella cheese over the sauce and dust with dried Italian seasoning for flavor.
  4. First Microwave: Place the mug in the microwave and cook on high for 1 minute and 15 seconds. The dough will rise and the cheese will begin to melt during this time.
  5. Add Pepperoni & Final Cook: Remove the mug from the microwave and arrange the mini pepperoni slices on top of the melted cheese. Return the mug to the microwave and cook for an additional 15 seconds to warm the pepperoni.
  6. Cool & Serve: Remove the pizza in a mug from the microwave and allow it to cool for about 1-2 minutes before eating, as it will be very hot. Enjoy straight from the mug!

Notes

  • This recipe can be customized with your favorite pizza toppings like diced bell peppers, mushrooms, or olives, but be mindful not to overload the mug.
  • For a vegetarian version, simply omit the pepperoni and add more vegetables.
  • Microwave power varies, so you might need to adjust cooking time slightly for your particular microwave.
  • A larger mug works better to prevent overflow as the dough rises while cooking.
  • For a cheesier pizza, add an extra tablespoon of mozzarella or mix in some grated parmesan.
