Ingredients
  

  • The Protein Base: 1 cup cottage cheese full-fat or low-fat, 2 large eggs.
  • The Flavor: ½ cup unsweetened cocoa powder ½ cup maple syrup (or honey), ¼ cup peanut or almond butter, 1 tsp vanilla extract.
  • Leavening & Salt: ½ tsp baking powder a pinch of salt.
  • Optional: ½ cup dark chocolate chips

Method
 

  1. Prep: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Liquefy: Place the cottage cheese in a blender or food processor. Blend until it is completely smooth and looks like thick cream. This is the secret to avoiding a lumpy texture.
  3. Combine: Add the eggs, cocoa powder, maple syrup, nut butter, vanilla, baking powder, and salt to the blender. Pulse or blend until you have a thick, glossy batter.
  4. Fold: If using chocolate chips, stir them into the batter by hand with a spatula.
  5. Bake: Pour the batter into the prepared pan and spread it into an even layer. Bake for 20–25 minutes. You want the center to be set but still slightly soft to ensure they stay fudgy.
  6. Set: Allow the brownies to cool completely in the pan. Because they are flourless, they need this time to "structure up" so you can get clean, sharp slices.

Notes

  • Nut Butter Tip: If your peanut butter is very stiff, microwave it for 10–15 seconds before adding it to the blender to help it incorporate more evenly.
  • Texture Check: Don't be alarmed if the batter tastes a bit salty before baking—the cottage cheese flavor disappears completely once baked, leaving only a rich chocolate taste.
