  • 8 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 4 green onions chopped
  • 4-6 jalapeños halved and deseeded
  • 12-16 slices of standard-cut bacon
  • 2 tbsp Slap Ya Mama Cajun seasoning
  • 1 tsp black pepper
  • 1/2 cup BBQ sauce for brushing

  1. Preheat the smoker: Heat your smoker to 250°F using hickory or applewood chips. These wood types will provide a sweet, smoky flavor that complements the spicy jalapeños and savory chicken perfectly.
  2. Prepare the filling: In a medium bowl, thoroughly combine the hot Italian sausage, softened cream cheese, shredded cheddar cheese, and chopped green onions. Mix until all ingredients are evenly incorporated to create a consistent filling.
  3. Stuff the jalapeños: Cut jalapeños lengthwise and carefully remove all seeds and membranes. Fill each jalapeño half generously with the sausage-cheese mixture, then press the halves back together to form whole stuffed jalapeños.
  4. Prepare the chicken: Lay out each thin-sliced chicken breast flat on a work surface. Season both sides with Cajun seasoning and black pepper. Place a stuffed jalapeño in the center of each breast, then roll the chicken tightly around the jalapeño.
  5. Wrap with bacon: Take 3-4 slices of bacon and wrap them around each chicken roll, ensuring the entire surface is covered. The bacon will help keep the chicken moist and add another layer of flavor. Secure with toothpicks to hold everything together during cooking.
  6. Smoke the chicken bombs: Place the wrapped chicken bombs directly on the smoker grates. Smoke for approximately 4 hours, flipping them halfway through the cooking process to ensure even cooking.
  7. Add BBQ sauce: During the final 20-30 minutes of cooking, brush the chicken bombs generously with BBQ sauce. Continue smoking until the internal temperature reaches 165°F and the bacon is crisp and caramelized.
  8. Rest and serve: Remove the chicken bombs from the smoker and let them rest for 5-10 minutes before serving. This allows the juices to redistribute throughout the meat for maximum flavor and tenderness.

Notes

  • For less heat, you can remove the jalapeño seeds and membranes completely or substitute with milder peppers like Anaheim or poblano.
  • If you don't have Slap Ya Mama seasoning, you can substitute with any Cajun or Creole seasoning blend.
  • These can be prepared up to a day ahead and refrigerated before cooking.
  • For a crispier bacon finish, you can increase the temperature to 300°F for the last 30 minutes of cooking.
  • If you don't have a smoker, these can be baked in an oven at 350°F for about 45-60 minutes.
