Strawberry Cheesecake Chimichangas

Ingredients
  

For the Cheesecake Filling:
  • 8 oz 225g cream cheese, softened
  • 1 cup powdered sugar confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 cup finely diced strawberries fresh or thawed frozen
For Assembly:
  • 6 large flour tortillas burrito size
  • 1 egg + 1 tablespoon water for egg wash
For Coating:
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • Oil for frying canola or vegetable oil
Optional Homemade Strawberry Sauce:
  • 1 1/2 cups chopped strawberries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 tablespoon water
Optional Toppings:
  • Fresh strawberry slices
  • Whipped cream
  • Powdered sugar for dusting
  • Chocolate or white chocolate drizzle

Method
 

  1. Make the Cheesecake Filling: Beat cream cheese, powdered sugar, and vanilla in a bowl until silky smooth. Pour in heavy cream and whip until fluffy and stable. Gently fold in diced strawberries. Refrigerate for 10-15 minutes to firm up the filling, which prevents excess moisture from making the tortillas soggy during frying.
  2. Assemble the Chimichangas: Lay a tortilla flat on a clean surface and spoon about 1/2 cup of the cheesecake filling in a log shape in the center. Fold in both sides, then roll up tightly like a burrito. Brush a little egg wash on the edge to seal the chimichanga securely, preventing filling leakage during frying. Repeat with remaining tortillas.
  3. Fry or Air-Fry the Chimichangas: For traditional frying, heat 1-2 inches of oil to 350°F (175°C) and place chimichangas seam-side down, frying 1-2 minutes per side until golden and crisp. For a healthier option, spray the chimichangas with cooking oil and air-fry at 400°F (200°C) for 8-10 minutes, flipping halfway. Remove fried chimichangas with tongs and drain on paper towels.
  4. Coat in Cinnamon Sugar: Mix cinnamon and sugar in a shallow dish. While still warm, roll the chimichangas in the cinnamon sugar mixture until fully coated, creating a sweet, donut-shop texture and flavor that perfectly complements the filling.
  5. Garnish and Serve: Top with strawberry sauce, whipped cream, extra strawberries, and/or a dusting of powdered sugar. Serve immediately for the best contrast between the crispy exterior and creamy filling.

Notes

  • For best results, keep the filling cold before assembly to prevent it from becoming too runny.
  • Don't overcrowd the frying pan - cook only 2 chimichangas at a time for even browning.
  • If making ahead, assemble and refrigerate, then fry just before serving for optimal crispness.
  • The homemade strawberry sauce can be made by combining all sauce ingredients in a small saucepan and cooking over medium heat for 5-7 minutes until thickened.
  • For a shortcut version, you can use Cool Whip instead of whipping heavy cream.
