  • 3 medium potatoes diced
  • 1 can 14.5 oz diced tomatoes
  • 8 cups vegetable broth

  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and black pepper to taste

Method

  2. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and cook for about 5 minutes, or until softened. Stir occasionally to prevent burning.
